Planning a gathering for the big game?  Whether you’re a sports fan or not, we think you’ll love this hearty chili recipe. It’s a simple, one-pot meal that can feed a big crowd and it features a handful of ingredients from the weekly sale display from January 31st – February 6th, so it’s easy on the budget. Using dried beans requires a little more advanced preparation (soaking) and a longer cooking time, but dried beans are much more economical and the longer cook time allows much more flavor to develop.  Cook up an extra large pot and freeze the leftovers for a busier weeknight. You’ll be so glad you did!

Butternut Split Pea Soup

This healthy, hearty soup serves up the warm flavors and aromas of autumn that you’re likely craving as the days grow cooler. You’ll find many of the ingredients in our weekly sale from October 11th – 17th, making this a perfect budget-friendly dinner. It’s also vegan, gluten-free, soy-free, and nut-free, making it a great option for accommodating food allergies. Leftovers freeze well, so make an extra large pot and stash some away!

 

Localvore Beef Stew

As our celebration of Eat Local Month rolls on, we’re excited to share this celebration of local ingredients known as Localvore Beef Stew. It combines many items that you’ll find in our weekly sale from September 20th – 26th, making this a budget-friendly option. We also think you’ll love the flexibility of this recipe, as it can be a catch-all for the abundance of produce coming out of your late summer garden. That’s why you’ll find celeriac in this recipe in the place of the more traditional celery since celeriac is more likely available this time of year and offers a very similar flavor profile.

Summer Pasta Salad

Looking for a cool meal for a hot summer night? Or a tasty make-ahead dish to take to a summer potluck? This pasta salad combines fresh, seasonal summer veggies & local pasta with tangy dressing, olives, and feta for a perfectly balanced summer meal. Many of the ingredients are featured in our weekly sale from July 12th – 18th, so this one’s easy on the wallet, too! Feel free to be creative with veggie add-ins. This is the kind of salad that can be built around just about any veggies that are abundant in your garden (or the local farm down the road) this time of year.

Summer Solstice Rolls

These simple summer solstice rolls make a perfect cool meal on a warm summer night. This recipe is extremely versatile, so feel free to use any fresh, colorful summer veggies you happen to have on hand. Our weekly sale from June 21st – 27th features a handful of the ingredients listed, making this one easy on the budget, too! If you don’t plan to serve the rolls right away, try rolling them in plastic wrap until you’re ready to eat. This will prevent the rolls from becoming soggy or sticking together.

 

 

Fish Tacos

These fresh, flavorful fish tacos are loaded with avocado and a zesty cilantro-lime slaw that make them particularly irresistible. Many of the ingredients are featured in our weekly sale from May 17th – 23rd, so they’re an excellent budget-friendly meal. If you like to kick up the spice factor, feel free to add a jalapeno to your slaw. We’d also love to recommend using Champlain Valley Creamery’s Queso Fresco (smoked or regular) as your shredded cheese option and a dash of Sonia’s Salsa. Both pair so perfectly with this dish!

Red Lentil Soup

Red lentils make a perfect weeknight meal due to the fact that they’re de-husked and split, dramatically reducing their cooking time. Combine them with a few very simple ingredients, and you’ve got a quick, easy, nutritious dinner! They also happen to be featured in our weekly sale from May 10th – 16th, making this recipe a budget-friendly option. You can keep it simple by following the recipe as-is, or consider spicing it up a bit with a teaspoon of your favorite Indian or Italian spices. It’s the perfect guilt-free comfort food!

Southern-Style Pinto Beans

Cooking with dried beans is one of our favorite ways to make food dollars stretch a mile while still having a delicious, nutritious, protein-packed meal. These organic dried pinto beans are featured in the weekly sale from January 11th – 17th, and when paired with a few simple ingredients and very minimal effort, you can transform them into a big, hearty pot of beans that holds its own as a main dish or as a side. This recipe calls for celery root, rather than celery stalks because celery root is in-season and available this time of year from local farms and is often a more affordable option than celery stalks. Make an extra large pot of these beautiful beans and freeze your leftovers for a no-fuss meal on a busier night, or stash into lunch-sized portions for a quick pack-and-go lunch. This is the kind of meal that is almost better on the second and third day. The flavors just seem to get richer and more robust. Enjoy over rice and/or with a fresh wedge of skillet cornbread.
