Easy Chicken Curry

Toss cubed chicken with curry, turmeric, and salt. Heat oil in a large pot over medium heat. Saute the chicken, stirring frequently, for 3-5 minutes. Add the onion and cauliflower to the pot and continue to cook for another 5-8 minutes, or until onion softens. Add the Maya Kaimal sauce of your choice, coconut milk, and potatoes. Bring to a gentle boil, then reduce heat, cover, and simmer on low for 20 minutes, or until potatoes are tender. Serve over rice and garnish with fresh basil and hot lime relish (see grocery aisle 3).
