Pasta Salad

Looking for a cool meal for a hot night? Or a tasty make-ahead dish to take to your next potluck? This pasta salad combines fresh, seasonal veggies & pasta with a tangy dressing, olives, and feta for a healthy, delicious meal. Many of the ingredients are featured in our weekly sale from June 8th – 14th, including local Maplebrook Farm Feta, so this one’s easy on the wallet, too! Feel free to be creative with veggie add-ins. This is the kind of salad that can be built around just about any veggies that are abundant in your garden (or your local farmstand or co-op!) this time of year!

Localvore Baguette

This sweet and savory combination of local ingredients makes an excellent localvore lunch or dinner, whether you’re dining in or enjoying a late summer picnic. You’ll find many of the ingredients featured in the Weekly Sale from September 1st – 7th, including Champlain Valley Creamery’s Organic Champlain Triple Cream cheese, Red Hen Baguettes, and Champlain Orchard’s apples, so it’s a perfect time to give this one a try!

Jarcuterie

As we continue to navigate the challenges presented by the pandemic, the desire to have safe gatherings is still on our minds  The pre-pandemic potluck spreads with their casseroles, pots of soup, and other shared dishes seem to lack the usual appeal. Thankfully, avoiding shared plates of food doesn’t necessarily mean saying goodbye to the charcuterie board. Thanks to this fun, single-serving spin on the classic, known as “jarcuterie”, you can serve up all of your favorite trappings of a traditional charcuterie platter at your next COVID-safe gathering. Pan Bagnat

Nobody likes a soggy sandwich, so when we came across this recipe for a tuna sandwich that actually improves as it sits in your lunchbox or picnic basket, we were excited to give it a try. According to recipe creator Melissa Clark, “the longer it sits (up to 24 hours), the better it gets. The flavors marry, the oil and tomato juices mingle, the anchovies dissolve into the bread and all of it coalesces into a sophisticated whole that stays intact when you bite in.” Clark also notes that pan bagnats can be a catchall for whatever vegetables are on hand: crisp hot and sweet peppers, fennel, cucumber, string beans, peas, and scallions all make excellent additions.
