This sweet and savory combination of local ingredients makes an excellent localvore lunch or dinner, whether you’re dining in or enjoying a late summer picnic. You’ll find many of the ingredients featured in the Weekly Sale from September 1st – 7th, including Champlain Valley Creamery’s Organic Champlain Triple Cream cheese, Red Hen Baguettes, and Champlain Orchard’s apples, so it’s a perfect time to give this one a try!
Preheat oven to 350 F. Slice the baguette in half, then split each half open lengthwise (like a book). Lay each half on a large piece of aluminum foil. Slice the cold cheese into thin slices and layer the slices on half of each sandwich (or spread the cheese if already softened), then spread dijon on the other half of each sandwich. Lay apple slices on top of the cheese, sprinkle with fresh thyme, and drizzle with honey. Close each sandwich and wrap them in aluminum foil. Bake at 350 for 15-20 minutes. Unwrap and serve warm, or keep them wrapped and head out on your picnic!
