Fresh Pumpkin Pie

Looking for a pumpkin pie recipe using fresh, wholesome ingredients? Look no further! You will not need your can opener for this one!  The bit of extra time it takes to prepare this pie is well worth the effort, as you’ll truly be able to savor the roasted flavor of your pumpkin and the sweetness of pure Vermont maple syrup. Bonus flavor-points if you’re able to pick up one of Golden Russet Farm’s Long Island Cheese pumpkins available in the Produce department while supplies last. The rich, earthy sweetness of those pumpkins is unbelievable! Ready-to-bake pie crust from Immaculate Baking will help reduce your prep time and you’ll find it in the first dairy cooler near our bulk section at the Co-op. If you want to make things even simpler, pick up a ready-to-bake 9-inch pie shell of your choosing. If pumpkin isn’t your thing, feel free to sub in roasted butternut squash or roasted sweet potatoes. Either way, we have a feeling this will become your new go-to pie for the holidays!

Turkey Breast Roulade

Smaller gatherings are the thing this holiday season and that means embracing new traditions, including alternatives to the whole roasted turkey. Dare we say that these classic mashed potatoes with a Vermont twist are an essential part of your holiday feast? We certainly think so. You’ll be glad that your list is a bit shorter as the holiday draws near. 

Cranberry Curd Tart

This festive (and gluten-free!) tart will make for a delicious and colorful addition to your holiday spread. It can be made a few days in advance to help alleviate baking burnout on the big day. Be sure to use local cranberries from Vermont Cranberry Company and top it with a dollop of your favorite local cream!

Chili

Planning a gathering for the big game?  Regardless of your sports fan status, we think you’ll love this hearty chili recipe. It’s a simple, one-pot meal that can feed a big crowd and it features a handful of ingredients from the weekly sale display from January 30th – February 5th, so it’s gentle on the budget. Using dried beans requires a little more advanced preparation (soaking) and a longer cooking time, but dried beans are much more economical and the longer cook time allows much more flavor to develop.  Cook up an extra-large pot and freeze the leftovers for a busier weeknight. You’ll be so glad you did!

Looking for a healthy, delicious, fruit-forward dessert to wow your holiday guests? This one is sure to please! It can also be made in advance – just store the poached pears in some of their poaching liquid. They’ll continue to marinate and will be extra flavorful as a result! Organic Bosc pears are featured in our weekly sale from December 5th – 11th, making this recipe particularly budget-friendly. It’s sure to be a crowd-pleaser!
