Breakfast for your Valentine

Chili

Planning a gathering for the big game?  Whether you’re a sports fan or not, we think you’ll love this hearty chili recipe. It’s a simple, one-pot meal that can feed a big crowd and it features a handful of ingredients from the weekly sale display from January 31st – February 6th, so it’s easy on the budget. Using dried beans requires a little more advanced preparation (soaking) and a longer cooking time, but dried beans are much more economical and the longer cook time allows much more flavor to develop.  Cook up an extra large pot and freeze the leftovers for a busier weeknight. You’ll be so glad you did!

Guacamole

This delicious and simple guacamole recipe comes to us from the avocado experts at Equal Exchange Co-op, who are working hard to radically transform the avocado market to benefit small, organic farmers. Equal Exchange partners with PRAGOR, a progressive cooperative of small-scale avocado farmers in Michoacán Mexico. This region of Mexico is called “the avocado capital of the world.” However, powerful corporate interests have made it difficult for small-scale farmers to compete. In response, PRAGOR courageously organized and decided they would collectively control the entire process from growing to exporting. We’ll be featuring these Organic, Fair Trade avocados in our weekly sale from January 31st – February 6th, so it’s a perfect time to make a big batch of guacamole to feed your game day crowd!

Homemade Pizza

Making pizza at home might seem intimidating – especially compared to the relative ease of popping a pre-made frozen pie into the oven, but we think you’ll agree that nothing tastes better than homemade and the process is actually quite simple. PaneBelle’s organic pizza dough is featured in our weekly sale from January 24th – 30th, along with local Maplebrook fresh mozzarella, local Bove’s pizza sauce, and a handful of perfect pizza toppings, so it’s an excellent time to try your hand at homemade pizza! Feel free to get creative with the toppings. This recipe makes 2 thin-crust 12” pizzas. If you prefer a thicker crust, follow the same instructions but create one larger pizza. 

Roasted Grapefruit with Granola & Yogurt

Ever tried roasting a grapefruit? We hadn’t either, but with grapefruits featured in the weekly sale from January 17th – 23rd, it seemed like a great time to give this recipe a try. We were instantly hooked! The warmth and spice from the ginger elevate this citrus fruit to a new level. Paired with your favorite granola and yogurt, plus a drizzle of honey and you’ve got a unique new way to enjoy some healthy breakfast staples. 

Thai Coconut Soup

The weekly sale from January 10th – 16th celebrates Thai cuisine and we’re excited to share this quick, easy recipe that is guaranteed to take your taste buds on a trip to Thailand! When life gets busy and schedules are tight, it’s handy to throw together simple, healthy, one-pot meals that are so flavorful, they taste as if you spent hours preparing them. This one definitely fits the bill and, since it features so many sale ingredients, it’s great for a tight budget, too!

Beet & Citrus Salad

This recipe is delicious as-is but is also versatile enough to accommodate what’s in your fridge. One tasty variation to consider is to use a tangy blue cheese in lieu of the feta. You’ll find organic salad mix, organic grapefruits, and local, organic beets featured in the weekly sale from January 3rd – 9th, so it’s a perfect time to give this salad a try!

Honey & Spice Poached Pears

Looking for a healthy, delicious, fruit-forward dessert to wow your holiday guests? This one is sure to please! It can also be made well in advance – just store the poached pears in some of their poaching liquid. They’ll continue to marinate and will be extra flavorful as a result! Organic red pears are featured in our weekly sale this week, making this recipe particularly budget-friendly. It’s sure to be a crowd-pleaser!

Honey Chevre Pears

This holiday appetizer couldn’t be simpler to assemble and they make the perfect cocktail snack. They’re a nice change of pace from the usual holiday cookies and pastries and they can be made well in advance and kept in the refrigerator until you’re ready to serve them.
