Beet & Citrus Salad
This recipe is delicious as-is but is also versatile enough to accommodate what’s in your fridge. One tasty variation to consider is to use a tangy blue cheese in lieu of the feta. Preheat oven to 400 degrees. Scrub and quarter the beets and toss wtih one tablespoon of the olive oil and a pinch of salt. Roast for 30 minutes, or until beets are fork-tender. In a small bowl, whisk together vinegar and remaining olive oil. Divide the greens equally among three plates. Top with beets, citrus, red onion, feta, walnuts, and black pepper. Drizzle with reserved dressing and serve.
