You could even assemble the slaw a day or two in advance for quicker meal prep on a busy weeknight!

Kimchijeon (Kimchi Pancake)

According to Chef and food writer Samin Nosrat, who adapted this recipe, Young S. Kim’s golden kimchijeon are a revelation. Tart with pungent kimchi, the pancakes are both satisfyingly chewy and shatteringly crisp. Nosrat suggests serving it to a crowd as an appetizer or enjoying it on its own as a filling meal. 

Soba Noodle Bowl

This quick and tasty soba noodle bowl is about as versatile as it gets. Make it a day or two in advance and serve it chilled, or whip it up for a weeknight meal served warm.  And feel free to be creative with the veggies and garnishes. It’s a perfect catch-all for whatever you happen to have on hand. If tofu’s not your thing, stir fry any protein you prefer and add it to the bowl in place of the tofu. The author of this recipe suggests looking for spears that are a minimum of 1/2-inch in diameter, as thinner asparagus will cook too quickly before the leeks have a chance to turn golden. Passover Braised Lamb with Dried Fruit

This hearty dish is a play on tsimmes, a traditional Jewish casserole. The bold flavors of North Africa and the Middle East are on display in this dish and braising the meat in red wine yields a tender cut of meat without a lot of work. Bibimbap

Likely one of the most well-known and beloved Korean dishes, Bibimbap is the ultimate comfort food. While there are many variations, Bibimbap simply translates to “mixed rice with meat and assorted vegetables ” and typically includes steamed rice, sauteed and seasoned vegetables (namul) or kimchi, and spicy gochujang, topped with marinated meat or an egg. Feel free to get creative with the toppings – this dish is a perfect catch-all for leftover veggies you have in the fridge.
