Summer Pasta Salad

Looking for a cool meal for a hot summer night? Or a tasty make-ahead dish to take to a summer potluck? This pasta salad combines fresh, seasonal summer veggies & local pasta with tangy dressing, olives, and feta for a perfectly balanced summer meal. Many of the ingredients are featured in our weekly sale from July 7th – 13th, so this one’s easy on the wallet, too! Feel free to be creative with veggie add-ins. This is the kind of salad that can be built around just about any veggies that are abundant in your garden (or the local farm down the road) this time of year.

Summer Solstice Rolls

The summer solstice is just around the corner and we think these summer rolls are a perfect way to welcome the new season. This recipe is extremely versatile, so feel free to use any fresh, colorful summer veggies and herbs you happen to have on hand. If tofu isn’t your thing, feel free to sub in your favorite cooked protein. Our weekly sale from June 2nd – 8th features a handful of the ingredients listed, making this one easy on the budget, too! If you don’t plan to serve the rolls right away, try rolling them in plastic wrap until you’re ready to eat. This will prevent the rolls from becoming soggy or sticking together. Other key tips are to avoid over-moistening the wrappers and avoid over-filling. Your first few are bound to be a bit clunky, but you’ll get the hang of it quickly.

Fish Tacos with Red Cabbage Mango Slaw

It may not yet be summer, but you can take your tastebuds on a summer vacation with these tasty fish tacos!  You’ll find many of the ingredients in our weekly sale display from April 28th – May 4th, including local Sonia’s Salsa and local organic All Souls Tortilleria corn tortillas, and this recipe will help you quickly pull it together. You could even assemble the slaw a day or two in advance for quicker meal prep on a busy weeknight!

Roasted Asparagus with Crispy Leeks and Capers

Spring is finally here and with this change in seasons comes the arrival of the tender spring veggies our bodies crave after a long, cold New England winter. Whether you’re celebrating Easter with your family or simply heralding the arrival of Spring, we think you’ll love this supremely springy asparagus recipe. The author of this recipe suggests looking for spears that are a minimum of 1/2-inch in diameter, as thinner asparagus will cook too quickly before the leeks have a chance to turn golden. You’ll find organic asparagus in our weekly sale from April 14th – 20th, so it’s a great time to give this one a try!

Scalloped Potato & Kale Casserole

This delicious casserole makes a perfect dish for your Easter brunch, or any occasion when you need to feed a crowd. You’ll find ham and potatoes featured in our Weekly Sale from April 14th – 20th, so it’s a perfect time to give this recipe a try! The original recipe did not include ham and it’s easy to leave it out if you prefer. It’s a fan favorite of our Produce Manager, Kira, who declared it “the most decadently delicious”!

Mango Green Smoothie

It’s smoothie week at the Co-op! Smoothies are a perfect vehicle for sneaking in a few extra servings of healthy raw veggies and they also offer a great way to use ‘inglorious’ fruits and veggies from your fridge that are a little ugly and past their prime. It’s fun to get creative and experimental with your smoothies and our weekly sale from March 24th – 30th offers up a handful of items to get your smoothie gears turning. This recipe is intended to be a rough framework using some of the ingredients featured in the sale, so don’t let it cramp your style!
