Roll Your Own Sushi!

The weekly sale from March 1st – 7th is a celebration of makizushi, which is the Japanese word for sushi! Have you ever tried making your own sushi at home? It’s easier than you might think, and with many of the ingredients on sale, it’s a great time to give it a try! Below are some simple steps for rolling your own sushi at home:

What you’ll need:

  • Nori sheets – find these in the weekly sale display or in Grocery aisle 3
  • Sushi rice – see weekly sale display or find in the Bulk department
  • Fillings of your choice – the weekly sale display will feature tuna steaks and avocados. Other fun fillings include cucumber, carrot, daikon radish, sprouts, pickled veggies – get creative!
  • Sushi Roller Mat – Find these in aisle 1, or you can try using a dish towel or Silpat mat
  • Plastic wrap – to prevent ingredients from sticking to the mat
  • Sauces, Dips, and Garnishes – tamari will be featured in the weekly sale and you can find other traditional sushi complements like pickled ginger and wasabi in Grocery aisle 3
  • A bowl of water and a dry cloth – keeping your fingers dry while handling the nori and well moistened while handling the rice is key to assembling great sushi

What to do:

  1. Cook sushi rice until tender and allow it to cool to room temperature.
  2. Lay out your sushi mat and top it with a piece of plastic wrap.
  3. With dry hands, lay one sheet of nori, rough-side-up, onto the mat.
  4. With well-moistened hands, spread a thin, even layer of sushi rice on top of the nori leaving about an inch of space at the top of the nori sheet.
  5. Lay down your fillings in a single line across the center of the rice layer. A little goes a long way and overstuffing can easily lead to busted rolls. It helps to have veggies sliced into long, thin, matchsticks and fish shaved into long, thin strips cut at an angle across the grain.
  6. Place your thumbs under your bamboo mat on the edge closest to you and roll away from you with gently curved hands to shape the roll into an even log, tucking the sushi contents snugly into the nori and pulling away the excess mat and plastic wrap as you roll.
  7. Slice the log into even segments using a sharp knife and allow to rest for a few minutes until the nori loses its crackly crispness. Serve with the sauces & garnishes of your choice!

Muhjadarrah

Muhjadarrah is an Arabic dish, made with a few, very basic ingredients: rice, lentils, onion and oil. That’s it! It’s vegetarian (vegan, even), very inexpensive, delicious and easy to make. Plus, you’ll find the green lentils featured in our weekly sale from June 22nd – 28th!

This recipe is beautifully simple as it is, but, like most classic dishes, there are dozens of different variations. You could introduce middle eastern spices such as cumin or cinnamon, roasted red peppers, cubed feta cheese, or a swirl of thick yogurt, but we recommend trying this first just as it is. It’s revolutionary to taste something so delicious and satisfying that comes from using the simplest and most humble ingredients imaginable.

A few bits of advice – be sure to caramelize the onion very deeply and to use plenty of salt and pepper. These are your only seasonings, so they’re very important. Also, be sure to use brown or green lentils, not the orange ones which will just dissolve to a mush.

Refried Black Bean Burrito

Our weekly sale from April 27th – May 3rd offers everything you need for a budget-friendly fiesta! This recipe is versatile, so feel free to make modifications based on your preferences. Want a meatier burrito? Add some of the Black River Meats ground beef that is featured in this week’s sale. Like a lot more spice? Add a dash of cayenne and a generous splash of your favorite hot sauce!

It’s smoothie week at the Co-op! Smoothies provide a great vehicle for sneaking a lot of healthy raw veggies into your diet and they also provide a great way to use ‘inglorious’ fruits and veggies from your fridge that might be a little past their prime. It’s fun to be creative and experimental with your smoothies and our weekly sale from April 20th – 26th offers up a handful of items to inspire your creative smoothie endeavors. This particular recipe is a favorite for its gorgeous color and nutrient-dense punch. It’s so delicious and refreshing that you’ll forget that it also happens to be super healthy.

Gluten-Free Apple Almond Pie

Thankfully, going gluten-free doesn’t have to mean giving up your favorite baked goods. This Gluten Free Apple Almond Tart is proof positive that you can still have your pie and eat it, too! Many of the ingredients are featured in this week’s gluten-free baking-themed sale (March 2nd – 9th), so it’s a great time to give it a try.

 

Oktoberfest Dinner

It’s a lot of fun to celebrate culinary traditions, even when they aren’t necessarily a part of one’s personal cultural heritage. They open our minds and our palates to the unique traditions and flavors of different cultures. With this in mind, we’re sharing a delicious recipe for an Oktoberfest meal! It’s the final week of our Eat Local Month celebration, so this Oktoberfest dinner features a spectacular lineup of local ingredients!  Dabbling in this German culinary tradition is also budget-friendly since many of the ingredients are featured in our weekly sale from September 29th – October 5th, so grab your stein and your lederhosen and celebrate the flavors of Oktoberfest!
