One Pot Meals

Kik Alicha

Alicha is a mild split pea stew simmered in a turmeric and ginger-based sauce. Split peas are known as kək or kikki in the local languages of Ethiopia – hence the name, kik alicha. Our Weekly Sale from April 7th – 13th celebrates Ethiopian cuisine and you’ll find organic yellow split peas featured in the sale. A traditional ingredient that gives kik alicha its authentic flavor is an Ethiopian spiced clarified butter known as Niter Kibbeh. Unfortunately, this ingredient can be hard to find around here, but we invite you to try making your own, or you may substitute ghee (though it will lack the full spice and aromatic profile of the original dish). This healthy, hearty one-pot meal is vegetarian and gluten-free making it a deliciously inclusive crowd-pleaser and it’s particularly tasty when scooped up with the traditional Ethiopian flatbread known as Injera!

Jambalaya

Jambalaya is a dish that brings together West African, French, and Spanish influences all into one colorful, flavorful dish. It’s popular fare during the Mardi Gras/Carnival season that culminates on “Fat Tuesday” which falls on March 1st this year. Our weekly sale from February 24th – March 2nd celebrates the traditional flavors of Mardi Gras, so it’s a perfect time to try this one-pot comfort food wonder! 

Moroccan Vegetable Tagine

Our weekly sale from February 3rd – 9th celebrates Moroccan cuisine and we think you’ll love this warm, hearty vegetable tagine that can easily be pulled together using ingredients from the weekly sale. The word tagine refers both to this traditional Moroccan meal and also the traditional clay or ceramic vessel with a domed or conical-shaped lid in which the stew is often cooked. Since most of us do not have a tagine on hand, this recipe offers a way to prepare this delicious dish using a heavy pot or Dutch oven.

Pumpkin Soup

We’re on a mission to spread the word that pumpkins are so much more than holiday decor! They’re incredibly nutritious, their seeds can be roasted for a healthy prebiotic-packed snack, and their pulp can be easily roasted and transformed into myriad mouth-watering dishes from pumpkin curry to pumpkin cheesecake and beyond. This pumpkin soup recipe is simple to make and it freezes beautifully. Pick up a pie pumpkin or two while they’re featured in our weekly sale from October 21st – 27th and reintroduce yourself to this versatile seasonal squash!

Abenaki Three Sisters Soup

Like many cultures around the world, the Abenaki celebrate a harvest festival in the fall and the “Three Sisters” are often part of the celebratory feast.  Much has been documented about the planting and importance of this famous companion planting of corn, beans, and squash and the importance of their cultivation.  This particular recipe comes to us from Shelburne Farms, who collaborated with Abenaki Scholar and Paleoethnobotanist Fred Wiseman and Anna Roy-Wiseman, to create a harvest dinner in celebration of the traditional Abenaki agricultural year. Three sisters soup is almost a universal dish throughout Indigenous North America. To develop this particular recipe, Roy-Wiseman tasted several traditional recipes from various Native cooks in the region and experimented with adding various spices and Native American additions such as tomatoes, peppers, and onions, to fit a more modern palette. You can find many of the ingredients needed for this hearty soup in our weekly sale from October 7th – 13th in celebration of Indigenous Peoples’ Day. 

 

 

Passover Braised Lamb with Dried Fruit

This hearty dish is a play on tsimmes, a traditional Jewish casserole. The bold flavors of North Africa and the Middle East are on display in this dish and braising the meat in red wine yields a tender cut of meat without a lot of work. You’ll find many of the ingredients in our Passover-themed weekly sale from March 25th – 31st, making this a budget-friendly meal the whole family will love.

Hearty Kale and White Bean Soup

If you’re looking for an immensely satisfying, healthy, one-pot winter meal, look no further than this kale and white bean soup. Using dried beans requires a bit of forethought for soaking and a longer cooking time, but you’ll be rewarded with intense flavor that can’t always be achieved with a canned bean. And perhaps, for those of us working from home (or home looking for work), it’s no big deal to take on some largely unattended cooking like a big pot of slow-simmered beans. The soup tastes even better on the second day and will keep for 4 to 5 days in the refrigerator. It also freezes well, and small amounts of the leftovers make an excellent pasta sauce when thickened with a bit of tomato paste. This meal also happens to be vegetarian, gluten-free, and if you’re celebrating Purim, this bean dish fits the bill. You’ll find most of the ingredients in our weekly sale from February 18th – 24th, so it’s a great time to give it a go!

Chili

It’s Super Bowl season and regardless of your sports fan status, we think you’ll love this hearty chili recipe. It’s a simple, one-pot meal that features a handful of ingredients from the weekly sale display from January 30th – February 5th, so it’s gentle on the budget. Using dried beans requires a little more advanced preparation (soaking) and a longer cooking time, but dried beans are much more economical and the longer cook time allows much more flavor to develop.  Cook up an extra-large pot and freeze the leftovers for a busier weeknight. You’ll be so glad you did!

Red Curry Lentils

Looking for a hearty, warming one-pot meal? This one is a winner! It’s also quite versatile, so feel free to be creative with the veggies that you add to the pot. Perhaps a big handful of spinach, or some diced sweet potato? Or prepare it exactly as-is and serve over a heap of rice with buttery garlic naan. You’ll find most of the ingredients featured in our Weekly Sale from January 21st – 27th, so it’s a perfect time to give this one a try!
