Fairtrade Chocolate Mousse

In honor of Fairtrade Month, we bring you a surprisingly decadent dessert without the post-indulgent guilt. It features a handful of Fairtrade Certified ingredients, some of which can be found in our Fairtrade-themed weekly sale from October 15th – 21st. Abenaki Three Sisters Soup

Like many cultures around the world, the Abenaki celebrated a harvest festival in the fall and the “Three Sisters” were often part of the celebratory feast.  Much has been documented about the planting and importance of this famous companion planting of corn, beans, and squash and the importance of their cultivation.  This particular recipe comes to us from Shelburne Farms, who collaborated with Abenaki Scholar and Paleoethnobotanist Fred Wiseman and Anna Roy-Wiseman, to create a harvest dinner in celebration of the traditional Abenaki agricultural year. Three sisters soup is almost a universal dish throughout Indigenous North America. To develop this particular recipe, Roy-Wiseman tasted several traditional recipes from various Native cooks in the region and experimented with adding various spices and Native American additions such as tomatoes, peppers, and onions, to fit a more modern palette. You can find many of the ingredients needed for this hearty soup in our weekly sale from October 8th – 14th in celebration of Indigenous Peoples’ Day.

As part of our celebration of Co-op Month, we’re featuring a handful of our favorite co-op-made products in the Weekly Sale from October 1st – 7th, including Organic Valley sour cream and Simply Organic dip mixes. Toss in a few other simple ingredients and you’ve got a fantastic dip!

Localvore Beef Stew

As our September Eat Local Challenge winds to a close, we’re excited to share this celebration of local ingredients known as Localvore Beef Stew. It combines many locally-grown items that you’ll find in our weekly sale from September 24th – 30th, making this a perfect budget-friendly one-pot meal. We also think you’ll love the flexibility of this recipe, as it can be a catch-all for the abundance of produce coming out of your late summer/early fall garden. That’s why you’ll find celeriac in this recipe in the place of the more traditional celery since celeriac is more likely available from a local farm this time of year and offers a very similar flavor profile. No celeriac? No problem! Just use celery, instead.

Baked Stuffed Apples

This simple, comforting dish makes a perfect Localvore breakfast. You can also opt to swap out the local yogurt with a scoop of Strafford Organic Creamery’s ice cream or Larson’s Farm & Creamery gelato for a decadent dessert. Many of the ingredients are featured in our weekly sale from September 17th – 23rd, so it’s a perfect time to give this recipe a try!

Localvore Lasagna

As our September Eat Local Challenge rolls on, we wanted to share one of our favorite recipes highlighting a list of fantastic local ingredients. There’s already so much to love about lasagna but when you include Bove’s marinara, Vermont Fresh pasta,  Maplebrook Farm’s ricotta, and Cabot’s mozzarella cheese, this classic comfort food reaches new heights! These ingredients are also featured in our weekly sale from September 10th – 16th,  so it’s a great time to give it a try.

Cherry Tomato and Chèvre Pasta

This recipe comes from the kitchen of Hannah Sessions at Blue Ledge Farm, who says it’s one of her favorite simple meals to toss together when the cherry tomatoes began to ripen. You’ll find Blue Ledge Farm chèvre in our Vermont cheese case. If your garden isn’t exploding with cherry tomatoes, you’ll find pints of these local jewels in our Produce Department from Orb Weaver Farm and Singing Cedars and you’ll also find plenty of fresh local basil from Singing Cedars. To round out this localvore meal, we suggest tossing it with fresh handmade pasta from The Arcadian (in our Deli Grab-n-go), Vermont Fresh Pasta (in the Bulk refrigerated section), or Grand Isle Pasta Company (in Bulk bins). This is a perfect 15-minute meal to kick off our September Eat Local Challenge!

Grilled Sausages, Onions, & Peppers

When it’s too darned hot to cook in the kitchen, grab a cold beverage, fire up the grill, and break out this very simple recipe. You’ll find most of the ingredients in our weekly sale from August 27th – September 2nd and they’re all LOCAL, so it’s a perfect way to kick off our annual Eat Local Challenge. 

Tuna Salad

It’s back to school time, and whether you’re packing lunches to send with your kids or pulling together simple lunches for homeschool breaks, we think you’ll love this classic tuna salad recipe with a bit of a Vermont twist. You’ll find many of the ingredients in our weekly sale from August 20th – 26th, so it’s a great time to give it a try. The local apples give it a great crunch and a bit of sweetness, balanced by the tang of the capers and citrus. Not a fan of mayo? Sub in 3-4 tablespoons of red wine vinegar. Want to work in some other veggies? Consider diced cucumbers, bell peppers, or shredded carrots in lieu of the celery. Don’t have any capers? Use diced pickles or olives for a similar effect. This recipe is highly adaptable based on your preferences, so feel free to be creative!
