Baked Stuffed Apples

Drip, drip, drip….we can almost hear the maple sap beginning to collect in pails in sugarbushes across Vermont and our Weekly Sale from March 4th – 10th celebrates the start of sugaring season with a handful of ingredients well suited to a hearty maple-themed breakfast! You’ll find local, organic, dark robust maple syrup quarts from Hillsboro Sugarworks; local apples from Champlain Orchards; local, organic granola from Patrick’s Artisan Bakery; local, organic Rogers Farmstead yogurt; local Paradiso Farm coffee; and ham steaks that are just begging for a maple glaze. This recipe pulls together many of those ingredients into a Vermont breakfast spread that also doubles as a decadent dessert when you swap out the local yogurt with a scoop of Strafford Organic Creamery’s ice cream or Larson’s Farm & Creamery gelato. 

Karin’s Collards

Our weekly sale from February 25th – March 3rd celebrates Southern cuisine and we think you’ll love this collard recipe that comes from one of our resident Southern transplants. Karin suggests that you make a big, hearty pot, and don’t forget to dunk your cornbread in the pot liquor (collard broth). It’s quite the Southern delicacy.

Southern-Style Pinto Beans

Cooking with dried beans is one of our favorite ways to make food dollars stretch a mile while still having a delicious, nutritious, protein-packed meal. These organic dried pinto beans are featured in the Southern Cuisine-themed weekly sale from February 25th – March 3rd, and when paired with a few simple ingredients and very minimal effort, you can transform them into a big, hearty meal that holds its own as a main dish or as a side. Make an extra-large pot and freeze your leftovers for a no-fuss meal on a busier night, or stash into lunch-sized portions for a quick pack-and-go lunch. This is the kind of meal that is almost better on the second and third days. The flavors just seem to get richer and more robust. Enjoy over rice and/or with a fresh wedge of skillet cornbread.

Hearty Kale and White Bean Soup

If you’re looking for an immensely satisfying, healthy, one-pot winter meal, look no further than this kale and white bean soup. Using dried beans requires a bit of forethought for soaking and a longer cooking time, but you’ll be rewarded with intense flavor that can’t always be achieved with a canned bean. And perhaps, for those of us working from home (or home looking for work), it’s no big deal to take on some largely unattended cooking like a big pot of slow-simmered beans. The soup tastes even better on the second day and will keep for 4 to 5 days in the refrigerator. It also freezes well, and small amounts of the leftovers make an excellent pasta sauce when thickened with a bit of tomato paste. This meal also happens to be vegetarian, gluten-free, and if you’re celebrating Purim, this bean dish fits the bill. Pork Dumplings

If you find pork dumplings from your favorite take-out spot irresistible, just wait until you taste this home-made version. Pork dumplings, or jiaozi, are the quintessential dish of Lunar New Year celebrations and these have everything you want in a dumpling: plump and nicely chewy, filled with tender pork, flavored with fresh ginger, green onion, and sesame oil.  Because of their resemblance to gold ingots, dumplings represent wishes of prosperity and fortune in the coming year. Making dumplings is also a group effort, so Lunar New Year celebrations are good times to get the whole family involved in making — and eating! — several batches. Whether you’re celebrating the Lunar New Year next week or stocking your freezer for a busy month ahead, these dumplings should definitely be on your list. Chili

It’s Super Bowl season and regardless of your sports fan status, we think you’ll love this hearty chili recipe. It’s a simple, one-pot meal that features a handful of ingredients from the weekly sale display from January 30th – February 5th, so it’s gentle on the budget. Using dried beans requires a little more advanced preparation (soaking) and a longer cooking time, but dried beans are much more economical and the longer cook time allows much more flavor to develop.  Cook up an extra-large pot and freeze the leftovers for a busier weeknight. You’ll be so glad you did!

Red Curry Lentils

Looking for a hearty, warming one-pot meal? This one is a winner! It’s also quite versatile, so feel free to be creative with the veggies that you add to the pot. Perhaps a big handful of spinach, or some diced sweet potato? Or prepare it exactly as-is and serve over a heap of rice with buttery garlic naan. You’ll find most of the ingredients featured in our Weekly Sale from January 21st – 27th, so it’s a perfect time to give this one a try!

Homemade Pizza

Making pizza at home might seem intimidating – especially compared to the relative ease of popping a pre-made frozen pie into the oven, but we think you’ll agree that nothing tastes better than homemade and the process is actually quite simple. PaneBelle’s pizza dough is featured in our weekly sale from January 14th – 20th, along with local Maplebrook fresh mozzarella, Muir Glen organic pizza sauce, and a handful of perfect pizza toppings, including local Vermont Smoke and Cure Pepperoni, so it’s an excellent time to try your hand at homemade pizza! Feel free to get creative with the toppings. This recipe makes 2 thin-crust 12” pizzas. If you prefer a thicker crust, follow the same instructions but create one larger pizza.
