Na’ama’s Fattoush

For members of the Muslim faith, the season of Ramadan (spanning April 1st -May 1 in 2022) is dedicated to turning inward, engaging in prayer, and observing soul-cleansing daily fasts from dawn to dusk, only breaking the fast with a light meal after the sun has set. One of the dishes on many tables in Levantine countries during Ramadan is fattoush. It may be served during the evening breaking of the fast and is often part of the celebratory spread that marks the end of the month of abstinence.

According to Chef Sami Tamimi, who shares this recipe for his mother’s fattoush in Jerusalem – the cookbook he co-authored with Yotam Ottolenghi, each cook, each family, and each community has their own variation of this classic dish.  Families engage in lively debates over whether to dice or slice the veggies, the size of the dice, whether or not to include lettuce, and whether or not to toast or fry the bread. What they all agree on is that the veggies must be fresh, ripe, and flavorful. Our weekly sale from March 31st – April 6th celebrates the culinary traditions of Ramadan and you’ll find many of the ingredients needed to pull together this deliciously simple dish! Tamimi’s mother’s recipe did not call for lettuce, though we listed it here as an optional add-in for those who feel that the crunch of the lettuce is a necessary component of this dish. Regarding whether to slice or dice? We’ll leave that up to you!

Mango Green Smoothie

It’s smoothie week at the Co-op! Smoothies are a perfect vehicle for sneaking in a few extra servings of healthy raw veggies and they also offer a great way to use ‘inglorious’ fruits and veggies from your fridge that are a little ugly and past their prime. It’s fun to get creative and experimental with your smoothies and our weekly sale from March 24th – 30th offers up a handful of items to get your smoothie gears turning. This recipe is intended to be a rough framework using some of the ingredients featured in the sale, so don’t let it cramp your style!

Red Lentil Dal

Dal is a layered dish with thousands of variations determined by everything from the availability of certain ingredients to family traditions. But amongst them all, two components are essential to dal: tender lentils and tempered spices. Soft-cooked lentils stewed in an aromatic broth full of onions, garlic, and ginger become the base of most dals. Tomatoes, potatoes, or other vegetables can be added as well, but those elements depend on the cook, the region, and the traditions that influence what goes in the pot. Our Indian Cuisine-themed weekly sale from February 17th – 23rd features organic red lentils, so it’s a great time to give this comforting dish a try!

Moroccan Vegetable Tagine

Our weekly sale from February 3rd – 9th celebrates Moroccan cuisine and we think you’ll love this warm, hearty vegetable tagine that can easily be pulled together using ingredients from the weekly sale. The word tagine refers both to this traditional Moroccan meal and also the traditional clay or ceramic vessel with a domed or conical-shaped lid in which the stew is often cooked. Since most of us do not have a tagine on hand, this recipe offers a way to prepare this delicious dish using a heavy pot or Dutch oven. 

Kimchijeon (Kimchi Pancake)

According to Chef and food writer Samin Nosrat, who adapted this recipe, Young S. Kim’s golden kimchijeon are a revelation. Tart with pungent kimchi, the pancakes are both satisfyingly chewy and shatteringly crisp. Nosrat suggests serving it to a crowd as an appetizer or enjoying it on its own as a filling meal. 

Soba Noodle Bowl

This quick and tasty soba noodle bowl is about as versatile as it gets. Make it a day or two in advance and serve it chilled, or whip it up for a weeknight meal served warm.  And feel free to be creative with the veggies and garnishes. It’s a perfect catch-all for whatever you happen to have on hand. If tofu’s not your thing, stir fry any protein you prefer and add it to the bowl in place of the tofu. You’ll find most of the ingredients in our weekly sale from April 15th – 21st, so it’s a perfect time to give this one a try!

Hearty Kale and White Bean Soup

If you’re looking for an immensely satisfying, healthy, one-pot winter meal, look no further than this kale and white bean soup. Using dried beans requires a bit of forethought for soaking and a longer cooking time, but you’ll be rewarded with intense flavor that can’t always be achieved with a canned bean. And perhaps, for those of us working from home (or home looking for work), it’s no big deal to take on some largely unattended cooking like a big pot of slow-simmered beans. The soup tastes even better on the second day and will keep for 4 to 5 days in the refrigerator. It also freezes well, and small amounts of the leftovers make an excellent pasta sauce when thickened with a bit of tomato paste. This meal also happens to be vegetarian, gluten-free, and if you’re celebrating Purim, this bean dish fits the bill. You’ll find most of the ingredients in our weekly sale from February 18th – 24th, so it’s a great time to give it a go!
