Looking for an easy, healthy treat guaranteed to cool you down on a hot summer day? Check out these watermelon pops! They’re a perfect addition to your July 4th barbecue menu. They’re gluten-free, dairy-free, and vegan-friendly.  No freezer pop molds? No problem! Just use a standard ice cube tray. You can add sticks for a hand-held treat, or leave them stick-less and add to water, lemonade, or any beverage of your choice for fun flavored ice cubes!

Combine watermelon, mint, zest, and honey (if using) in a blender or food processor. Puree until smooth. Pour into ice cube trays and place trays in freezer. If you wish to make pops, set a time for one hour. Once the hour has passed, remove the cube trays from the freezer and insert kebab skewers. Return the cube trays to the freezer until the pops are completely frozen. If you prefer to leave the cubes stick-free, leave them in the freezer until solid and add to water, lemonade, or beverage of your choice.
