Pasta Salad
Description
If you’re looking for a very versatile pasta salad, we think you’ll find this one’s a winner. It’s the kind of meal that comes together in less than 30 minutes, can be made a few days in advance, travels well to picnics and potlucks, and it can serve as a perfect catch-all for the veggies you happen to have on hand. You may prefer to serve it as a side dish or round it out with chopped salami or other protein to make a heartier main dish. You’ll find many of the ingredients featured in our weekly sale from May 13th – 19th, so it’s a perfect time to give this one a try!
Instructions
Bring a large pot of generously salted water to a boil. Add the broccoli florets and blanch just until tender and bright green, 3-4 minutes. Remove broccoli from the water with a slotted spoon and plunge into cold water. Set aside. Use that same pot of boiling water to cook your pasta according to package directions, about 7-10 minutes. Meanwhile, place your sliced onions in a bit of the dressing to soften their bite. Once pasta is cooked, strain it, rinse it under cool water and toss it with the broccoli, onion, bell peppers, olives, tomatoes, feta, and dressing. Taste and adjust seasoning, as needed. Allow to chill for a half hour or more before serving. Garnish with fresh herbs, if desired.
