Pasta Salad

Looking for a cool meal for a hot night? Or a tasty make-ahead dish to take to your next potluck? This pasta salad combines fresh, seasonal veggies & pasta with a tangy dressing, olives, and feta for a healthy, delicious meal. Many of the ingredients are featured in our weekly sale from June 8th – 14th, including local Maplebrook Farm Feta, so this one’s easy on the wallet, too! Feel free to be creative with veggie add-ins. This is the kind of salad that can be built around just about any veggies that are abundant in your garden (or your local farmstand or co-op!) this time of year!

Summer Rolls

This recipe is extremely versatile, so feel free to use any fresh, colorful summer veggies and herbs you happen to have on hand. If tofu isn’t your thing, feel free to sub in your favorite cooked protein. If you don’t plan to serve the rolls right away, try rolling them in plastic wrap until you’re ready to eat. This will prevent the rolls from becoming soggy or sticking together. Other key tips are to avoid over-moistening the wrappers and avoid over-filling. Your first few are bound to be a bit clunky, but you’ll get the hang of it quickly.

 

 

Grilled Pork Chops

Charcuterie

The season of picnics, potlucks, and graduation celebrations is upon us and charcuterie boards can make for an attractive, low-effort, crowd-pleasing centerpiece for these types of gatherings. The word “charcuterie” refers to cold cooked, cured, or smoked meats, so in the most literal sense, a traditional charcuterie board is just a meat platter, though the everyday definition has expanded to include a broad combination of cheeses, dried and fresh fruits and vegetables, pickled veggies, toasted nuts, olives, and complementary condiments – honeys, jams, jellies, chutneys, mustards and more! Our weekly sale from May 18th – 24th features a lineup of ingredients to help get you started and this recipe will guide you in pulling those ingredients together. That being said, a prime ingredient in any charcuterie board is creativity, so consider this a canvas upon which to build according to your own tastes!

Spring Quiche

There are so many reasons to love the humble quiche. It’s an incredibly versatile dish that can be prepared in advance, served hot or cold, and offers a perfect vehicle for a variety of different fillings. It also freezes well and travels well if you’re visiting friends or family for brunch.  

Bibimbap

Likely one of the most well-known and beloved Korean dishes, Bibimbap is the ultimate comfort food. While there are many variations, Bibimbap simply translates to “mixed rice with meat and assorted vegetables ” and typically includes steamed rice, sauteed and seasoned vegetables (namul) or kimchi, and spicy gochujang, topped with marinated meat or an egg. Feel free to get creative with the toppings – this dish is a perfect catch-all for leftover veggies you have in the fridge.

Fish Arepas

Our Weekly Sale from April 27th – May 3rd features local, organic Moon and Stars arepas along with a lineup of items that you might typically associate with a Baja-style fish taco. With the encouragement of Moon and Stars founder/owner Nando Jaramillo, we’re merging these traditional Colombian arepas with the flavors of this street-food staple to create a combination that is sure to please. According to Nando, “I think arepas go with everything and this recipe looks so yummy that I want to try it right away. I think it’s wonderful to explore diversity through the combination of different cultures.” Moon and Stars Arepas not only make delicious Colombian arepas and empanadas for Vermonters to enjoy, but they’re also on a dual mission to connect community, traditional food, and regenerative farming through heirloom corn and the arepa-making process. The organization strives to provide nutrient-dense and culturally vital food, while both engaging the community in ancestral knowledge and creating new ideas about cultural and environmental sustainability. Haak ka Saag

Our Weekly Sale from April 13th – 19th celebrates the culinary traditions of Vaisakhi. This spring holiday, also known as Baisakhi, is traditionally celebrated on either April 13th or 14th and has been celebrated as a harvest festival in Punjab – an area of northern India – for a long time, even before it became so important to Sikhs. In 1699, Guru Gobind Singh chose the festival as the moment to establish the Khalsa – that’s the collective name given to Sikhs who’ve been baptized, and thus marks the time when Sikhism was born as a collective faith. Like many celebratory holidays, Vaisakhi is marked with singing, dancing, parades, colorful attire, and delicious foods that honor the harvest. With this in mind, we share this haak ka saag recipe hailing from the Punjab region of northern India. The recipe’s author describes it as “lip-smackingly good peasant food” which pairs well with the tandoori chicken recipe also featured this week on our Blog and Weekly Sale display
