Beet & Citrus Salad
Beets, citrus, and walnuts are a classic trio that come together beautifully in this winter salad. You’ll find many of the ingredients in our weekly sale from January 2nd – 8th, so it’s a great time to give it a try. It’s hearty enough to stand alone as a dinner salad but also makes a nice side dish. One tasty variation to consider is to use a tangy blue cheese in lieu of the feta. Enjoy!
Preheat oven to 400 degrees. Scrub and quarter the beets and toss wtih one tablespoon of the olive oil and a pinch of salt. Roast for 30 minutes, or until beets are fork-tender. In a small bowl, whisk together vinegar and remaining olive oil. Divide the greens equally among three plates. Top with beets, citrus, red onion, feta, walnuts, and black pepper. Drizzle with reserved dressing and serve.
