Asparagus with Lemon & Garlic
There are a handful of glorious green veggies whose presence on our produce shelves seem to announce the arrival of spring, and our weekly sale from April 13th – 19th highlights one of these — asparagus! This recipe is unbelievably quick & easy to prepare and it makes a perfect side dish for any spring feast.
Rinse the asparagus, then trim and discard the bottom 2-inches. Toss the asparagus with the olive oil, garlic, lemon juice, lemon zest, salt & pepper. Heat a skillet over medium-high heat and add the asparagus. Pan sear the asparagus for 3-5 minutes, or until it’s just beginning to become tender and slightly browning on the outside.
