Apple Currant Muffins
The baking season is upon us and this and we think you’ll love this Apple Currant Muffin recipe. Its simplicity will prime you well for more elaborate baking endeavors during the holidays and the flavors and aromas are perfect for the season. Preheat oven to 350 F. Sift flour, baking powder, ground cinnamon, and salt into a medium bowl. In a separate bowl, combine milk, eggs, sugar, and butter and beat for 4-5 minutes on medium-low. Slowly add the flour mixture to the wet mixture while continuing to beat. Add currants and chopped apples and beat just until combined. Grease a muffin tin with butter (or use muffin cups) and fill each cup half-full with batter. Bake at 350 for 15-20 minutes.
