Tuna Salad

It’s back to school time, and whether you’re packing lunches to send with your kids or pulling together simple lunches for homeschool breaks, we think you’ll love this classic tuna salad recipe with a bit of a Vermont twist. You’ll find many of the ingredients in our weekly sale from August 20th – 26th, so it’s a great time to give it a try. The local apples give it a great crunch and a bit of sweetness, balanced by the tang of the capers and citrus. Not a fan of mayo? Sub in 3-4 tablespoons of red wine vinegar. Want to work in some other veggies? Consider diced cucumbers, bell peppers, or shredded carrots in lieu of the celery. Don’t have any capers? Use diced pickles or olives for a similar effect. This recipe is highly adaptable based on your preferences, so feel free to be creative!  


In a medium bowl, combine the tuna, mayonnaise, celery, onion, capers, and lemon juice. Mix with a fork until thoroughly combined. Season to taste with salt and pepper. Serve on the sandwich bread or wrap of your choice with crunchy romaine lettuce and a thick slice of local tomato.

    Yummy! I notice the recipe calls for mayonnaise. i will make this soon, I just bought the tuna suggested for this recipe. PLEASE!!! PLEASE!!!! —- Don’t always use Veganaise ( fake mayo) in the pre-made salads in the Co-op Deli. This would be a wonderful salad to sell pre-made for sale. No need to make vegan may if the salad is chicken or tuna.
    I bet I am not alone when I say I absolutely do NOT like veganaise— ( fake mayo) — give me the traditional type!
    WHY? It would be interesting to see if sales might change if salads were offered with genuine mayo instead of “fake” mayo for vegans. i would be buying the chicken salad, tuna, curry, potato salad, etc. if they were made with regular mayo.
    *Interesting you offer a yummy recipe with mayo for us to try at home but don’t offer pre-made salads in deli with mayo.
