Gently heat the curry paste in a pan with the solid portion from the top of each can of coconut milk until it starts to sizzle. Add the remaining coconut milk, bring to a simmer, then add the snow peas and bok choy. Cook for an additional minute or two. Add the fish and cook gently for 3 minutes or until the fish is flaky and cooked through, then season with a few splashes of fish sauce. Serve over rice with a generous sprinkling of the cilantro/basil, the red chile slices, and the chopped cashews.
