Grilled Peach Melba
This twist on a classic peach melba takes this summer dessert to new heights, thanks to the smoky, caramelized flavor that the grill can impart. You’ll find many of the ingredients featured in our weekly sale from July 29th – August 4th, including IPM-grown Pennsylvania peaches, so it’s a great time to give it a try! If you’re short on time, note that the berry sauce and the grilled peaches can be prepared in advance for fast and easy assembly once you’re ready to indulge in this delicious treat!
Preheat grill to high (450°F to 550°F) or prepare charcoals. Combine berries and sugar/maple syrup in a small saucepan and simmer over medium heat, stirring occasionally, until juicy (5 – 8 minutes). Remove from heat, add lemon juice and a pinch of flaky sea salt, then puree until very smooth. Transfer berry sauce to an airtight container, and refrigerate until chilled, about 30 minutes. Meanwhile, grill peach wedges, uncovered, until lightly charred, 3 to 4 minutes per side. Transfer to a work surface; let cool completely. Decoratively layer vanilla ice cream or gelato, peaches, and berry sauce in each of 6 (8-ounce) glasses. Sprinkle with flaky sea salt, and serve immediately.
