Easy Lamb Curry
This lamb curry dish is the perfect weeknight one-pot meal. Toss cubed lamb with curry, turmeric, and salt. Heat ghee in a large pot over medium heat. Sear the lamb until browned on all sides. Remove from pan and set aside. Add the onion and cauliflower to the pot and continue to cook for another 5-8 minutes, or until onion softens. Add the Maya Kaimal sauce, coconut milk, and potatoes. Bring to a gentle boil, then reduce heat, cover, and simmer on low for 20 minutes, or until potatoes are tender. Serve over rice and garnish with cilantro.
