Citrus & Arugula Salad
This bright, fresh winter salad highlights the fact that most citrus fruits ripen to their sweetest and juiciest during the North American winter. Our weekly sale from December 22nd-28th features organic Navel oranges and we typically receive our first shipment of ripe blood oranges in late December. If you can’t find blood oranges, feel free to use any combination of citrus fruits.
Place 3 tablespoons of vinegar and onion in a bowl and let sit for 15 minutes; drain, discarding vinegar. Peel oranges and trim away the pith, then slice them into 1/4 – inch thick cross-cut slices. Arrange the orange slices in alternating colors on a large plate. Sprinkle with mint, pistachios, and the marinated red onions. Toss the remaining vinegar, arugula, oil, salt, and pepper in a bowl. Pile the arugula in the center of the oranges and sprinkle with cheese. Serve immediately.
