Grilled Vidalia Onions

The sweetness of the onion caramelizes beautifully on the grill, resulting in a pile of sweet and savory onion rings that are the perfect burger topping or accompaniment to just about any dish. Instructions
For a charcoal grill, prepare the coals and arrange them so that there is a hot side of the grill and a cooler side of the grill. For a gas grill, preheat the grill for 10-15 minutes then reduce the heat to low. Slice the root and top end from each onion. Peel away the outermost papery layer of onion skin, then slice the onion into even rings about 3/4″ thick. Secure each ring with a piece of a bamboo skewer making sure to pierce the tender center of each ring to hold it in place. Trim the skewer so that there’s not a lot of excess sticking out of the onion. Brush both sides of each onion slice with olive oil and season with salt and pepper. Once the grill is ready, place the onions on the cooler side of the grill (for charcoal) or onto a gas grill set to low. Flip the onions every 10 minutes, or so, cooking for a total of 25-40 minutes, until the onions are golden and tender throughout.
