Parsley Potato Soup
Thank you again to everyone who joined us for our 27th Empty Bowl Dinner to benefit local food shelves, CVOEO and HOPE. Since that evening, many of you have reached out, hoping to get a look at the recipes for the delicious soups our volunteers prepared for the dinner. Victoria Dewind, the maker of our vegetarian option – Parsley Potato Soup – kindly shared her recipe with me, to share with all of you. Hope you enjoy making this as much as we all enjoyed eating it!
Boil potatoes in water until soft. Saute onions in butter and curry and add to potatoes. Add seasonings. Blend with broth, milk and parsley until smooth.
